Basil Pesto Chicken & Pasta
This dinner is super simple, and ready in less than 20 minutes! Delicious and packed with nutrients, so enjoy this one guilt-free!
What you'll need:
1 package organic free range chicken breasts
2 cups organic broccoli florets
2 garlic cloves
1 onion, chopped
1/2 cup homemade basilpesto* (see sides)
2 cups whole wheat pasta of choice (bowties work well)
4 cups of water
salt and pepper to taste
pinch of red pepper flakes
1 cup sun dried tomatoes
2 tbsp extra virgin olive oil
What to do:
Season chicken with red pepper flakes, salt and pepper
Heat olive oil in pan on medium-high heat, cook chicken with onions and sundried tomatoes (about 6 min each side)
While chicken is cooking, bring water to a boil, then add pasta for about 7 minutes, or until al dente
Place broccoli into a glass bowl with 1/4 cup water. Cover with a ceramic or glass plate, and steam in microwave for about 4 minutes
Make basil pesto (*see recipe in Sides)
In a large bowl, combine sliced chicken, onions, sundried tomatoes, broccoli, pasta and pesto until mixed well
